Yummy Muffins

There are such things like staples in terms of cooking and baking. Staples that aren’t staples out of necessity but out of pleasure, but a staple because they are easy enough to make but still they are so delicious that you want to have one after the other. One of such a staple is this muffin recipe, I have had it so long that I forgot where it came from, but it is fabulous:

  • you can add anything in it you want like berries, banana, dried fruit, chocolate chips, cocoa powder, grated carrot, fresh fruit, steamed fruit – seriously I tried most of the above and all of it was delicious
  • you can easily replace each egg with either 2 tablespoon of veg. oil or with an egg replacement product
  • they are not too sweet

145g/5oz caster sugar

250g/9oz self raising flour

1 tsp bicarbonate of soda

85g/3oz melted butter

2 large eggs beaten

200ml milk

 

pre-heat the oven to 200c/fan 180c/gas 6,
combine the sugar, flour, and soda in one bowl,
and combine all the other ingredients in a bowl,
then pour the wet into the dry with a metal spoon,
and fold in your choice of berries/chocolate etc. DON’T OVERSTIR!!!!!! A lumpy batter makes the best muffins!
Then pour the mixture into muffin cases and cook in
the oven for 15-18 minutes, when cooked, take out,
and place on cooling rack, best served warm.
Storage: these will keep for about a week in an air tight Box.
