Muffin Pizza
Now you might think that I make Pizza with cupcake style muffins, no, of course I don’t. I am talking about English Muffins. It’s not really a recipe as such just something I throw together because my daughter likes it, it’s quick and easy to do and the result is usually one happy toddler.
What you need:
- English Muffin slightly pretoasted
- some pizza sauce (I make my own, but you can obviously use a jar)
- some veg for topping (in the pic below I dry fried some courgette and added some olives)
- some Mozzarella or other Pizza cheese
And then all you do is assemble it, put it under the grill for about 5 minutes (check before that though) and hey presto, a delicious quick meal. We all had it last week and it wasn’t bad at all!
I love mini-pizzas too, though admittedly, I was kinda interested in what a “pizza muffin” might taste like!
